- 1 teaspoon lemon zest
- 1 tablespoon fresh squeezed lemon juice
- 1 tablespoon extra-virgin olive oil
- 1 small clove garlic, finely chopped
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Empty contents of SEEDS OF CHANGE® Brown Basmati Rice in large bowl, breaking apart any large pieces.
Stir in tomatoes, cucumber, parsley and mint.
In 1-cup measure, whisk together remaining ingredients.
Pour over rice mixture.
Stir to combine.
