INGREDIENTS
  • 1 (8.5-ounce) package SEEDS OF CHANGE®
  • 2 Roma tomatoes, seeded and chopped
  • 1/2 cup peeled, seeded and chopped cucumber
  • 1/2 cup chopped fresh parsley
  • 2 tablespoons chopped fresh mint
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh squeezed lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 1 small clove garlic, finely chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
DIRECTIONS

Empty contents of SEEDS OF CHANGE® Brown Basmati Rice in large bowl, breaking apart any large pieces. Stir in tomatoes, cucumber, parsley and mint.

In 1-cup measure, whisk together remaining ingredients. Pour over rice mixture. Stir to combine. Serve immediately or cover and refrigerate up to 2 hours.
