Cheesy Mexican Breakfast Quiche

Here’s a delicious way to wake up! This easy-to-make quiche gets you going with a delectable combination of eggs, Cheddar cheese, ham, and organic Spanish-style rice. Nobody in your home will sleep late when you start cooking this eye-opening dish!

INGREDIENTS
  • Nonstick spray
  • 6 eggs
  • 3/4 cup milk
  • 1 (8.5-ounce) package SEEDS OF CHANGE®
  • 1 cup shredded Cheddar cheese
  • 1 cup diced fully-cooked ham
  • 2 tablespoons chopped fresh cilantro
  • Salsa
  • Sour cream
  • Avocado slices
DIRECTIONS

Heat oven to 350°F. Spray 12-cup medium muffin pan with cooking spray.

In medium bowl, whisk eggs and milk until combined. Stir in SEEDS OF CHANGE® Spanish Style Rice, cheese, ham and cilantro. Divide mixture evenly among muffin cups.

Bake 25 to 30 minutes or until tops are brown and centers are set. Let stand 5 minutes before removing from pan. Serve with salsa, sour cream and avocado.
