Chipotle Breakfast Tacos with Ham, Eggs, and Brown Rice

With this recipe, any time is a great time for ham and eggs. That's because this delectable dish features organic SEEDS OF CHANGE® roasted-Chipotle simmer sauce and all you favorite Tex-Mex garnishes. And it only takes a few quick minutes to make!

INGREDIENTS
  • 1 (8-ounce) package SEEDS OF CHANGE® Taco Roasted Chipotle Simmer Sauce
  • 1 (8.5-ounce) package SEEDS OF CHANGE®
  • 1 cup (4-ounces) diced deli ham (1/4 x 1/4-inches)
  • 2 tablespoons extra virgin olive oil
  • 4 eggs
Garnishes:
  • Corn chips
  • Guacamole
  • Sour Cream
  • Chopped Green Onions
DIRECTIONS

In 10-inch skillet place SEEDS OF CHANGE® Taco Roasted Chipotle Simmer Sauce, SEEDS OF CHANGE® Quinoa & Brown Rice with Garlic packet, and diced ham pieces.

Heat over medium heat, stirring occasionally, until heated through (4 to 5 minutes); set aside and keep warm.

Meanwhile, in clean 10-inch skillet, heat 1 tablespoon olive oil over medium heat.

Add 2 eggs and cook either sunny-side up or over-easy.

To serve: place about ¾ cup SEEDS OF CHANGE® Taco Roasted Chipotle Simmer Sauce and SEEDS OF CHANGE® Quinoa & Brown Rice with Garlic mixture on plate and top with 1 cooked egg.

Garnish with corn chips, guacamole, sour cream, and chopped onions.

Repeat with remaining eggs.
