You’ll never settle for an ordinary omelet again after trying this rich and flavorful recipe! Chorizo sausage, organic Spanish-style rice, plus fresh herbs and vegetables combine to create a sensational meal that you’ll love for breakfast—or any time of the day when you want something filling.
- 5 eggs
- 2 tablespoons whipping cream or half-and-half
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon vegetable oil
- 6 ounces Chorizo sausage, casing removed
- 1/2 cup chopped onion
Whisk eggs, cream, salt and pepper in medium bowl; set aside.
In a 10-inch oven-proof skillet, heat oil over medium heat.
Cook and stir sausage 3 minutes, breaking sausage into crumbles.
Stir in onion and bell pepper; cook and stir 3 minutes longer or until onion is softened.
Drain fat from skillet, if necessary.
Stir in SEEDS OF CHANGE® Spanish Rice until heated through.
Stir in egg mixture; cook 2 minutes without stirring until eggs start to set.
Sprinkle with cheese.
Cover; reduce heat to medium-low.
Cook until frittata is almost set but top is still runny, about 3 minutes.
Place skillet under broiler about 4 inches from heat.
Broil until top is set and golden brown on top, 1 to 2 minutes.
Sprinkle with cilantro and tomato.
Let stand 2 minutes. Slice into wedges and serve.
