Chorizo-Rice Frittata

INGREDIENTS
  • 5 eggs
  • 2 tablespoons whipping cream or half-and-half
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon vegetable oil
  • 6 ounces Chorizo sausage, casing removed
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1 package SEEDS OF CHANGE®
  • 1/2 cup shredded Manchego cheese
  • 2 tablespoons chopped fresh tomato
  • 2 tablespoons chopped cilantro
DIRECTIONS
  1. Whisk eggs, cream, salt and pepper in medium bowl; set aside.

  2. Heat broiler.

  3. In a 10-inch oven-proof skillet, heat oil over medium heat.

  4. Cook and stir sausage 3 minutes, breaking sausage into crumbles.

  5. Stir in onion and bell pepper; cook and stir 3 minutes longer or until onion is softened.

  6. Drain fat from skillet, if necessary.

  7. Stir in SEEDS OF CHANGE® Spanish Rice until heated through.

  8. Stir in egg mixture; cook 2 minutes without stirring until eggs start to set.

  9. Sprinkle with cheese.

  10. Cover; reduce heat to medium-low.

  11. Cook until frittata is almost set but top is still runny, about 3 minutes.

  12. Place skillet under broiler about 4 inches from heat.

  13. Broil until top is set and golden brown on top, 1 to 2 minutes.

  14. Sprinkle with cilantro and tomato.

  15. Let stand 2 minutes. Slice into wedges and serve.
