- 4 cups assorted fresh mushrooms, chopped
- 1 medium onion, chopped
- 3 tablespoons butter
- 1/4 cup all-purpose flour
- 3 cups chicken or vegetable broth
- 1/2 cup dry white wine
- 1 tablespoon chopped fresh thyme
In 5-quart Dutch oven or stockpot, melt butter over medium heat. Cook and stir mushrooms and onion 6 to 8 minutes or until softened. Stir in flour; cook 1 minute. Gradually stir in broth and wine until thickened and bubbly.
