Who said fast can’t be good? In just 20 minutes, your taste buds will be smiling thanks to this recipe’s lively blend of shrimp, Chorizo sausage, organic Spanish-style rice, and spices. It adds up to a lot of flavor in a little time.
- 1 tablespoon extra-virgin olive oil, divided
- 1/2 pound raw medium shrimp, peeled and deveined
- 6 ounces Chorizo sausage, casing removed and crumbled or bulk chorizo sausage
- 1/2 cup chopped onion
- 1 clove garlic, finely chopped
In 10-inch nonstick skillet, heat oil over medium-high heat.
Cook shrimp just until pink, 3 to 4 minutes.
Remove from skillet.
Add sausage to skillet; cook and stir 3 minutes or until beginning to brown.
Stir in onion and garlic. Cook and stir 3 to 4 minutes, until onion is tender and sausage is cooked through.
Stir in SEEDS OF CHANGE® Spanish Rice, tomatoes, peas, paprika and saffron. Cook, stirring constantly, 2 to 3 minutes or until heated through.
Stir in shrimp. Garnish with parsley.
