Roasted Brussels Sprouts with Whole Grains and Fruit

INGREDIENTS
  • 3/4 pound Brussels Sprouts, trimmed and halved
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 (8.5 ounce) package
  • 1/4 cup snipped dried apricots
  • 4 slices cooked and crumbled bacon
DIRECTIONS

Heat oven to 400°F. On large baking sheet, toss Brussels sprouts with olive oil, salt and pepper. Bake 25 to 30 minutes or until tender, stirring halfway through roasting.

Meanwhile, heat SEEDS OF CHANGE® Quinoa and Brown Rice as directed on package; place in serving bowl. Stir in apricots, bacon and roasted Brussels sprouts.
