Salmon-Asparagus Brown Rice Bake

INGREDIENTS
  • Nonstick spray
  • 1 package
  • 2 cups cut-up fresh asparagus
  • 1/3 cup chicken broth
  • 1 teaspoon lemon zest
  • 4 (4 to 5 ounces each) salmon filets, skin removed
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 lemon slices
DIRECTIONS
  1. Heat oven to 375°F. Spray 8-inch square baking dish with cooking spray.

  2. Stir SEEDS OF CHANGE® Brown & Red Rice with Chia & Kale Blend, asparagus, chicken broth and lemon zest together in baking dish; place salmon over rice.

  3. Drizzle lemon juice over salmon; sprinkle with salt and pepper.

  4. Cover tightly with aluminum foil.

  5. Bake 35 to 45 minutes or until fish flakes easily with fork.

  6. Garnish top of each filet with lemon slice.
