- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup chopped carrots
- 1/2 cup chopped cucumber
- 1/2 cup cut-up roasted red bell pepper
- 1/4 cup chopped fresh parsley
- 2 tablespoons chopped fresh basil
- 1/4 cup sliced green onion
- 1/4 cup crumbled Feta cheese
In 1-cup measure, whisk together vinegar, oil, mustard, garlic, salt and pepper.
In large bowl, toss remaining ingredients with vinaigrette. Serve immediately or cover and refrigerate up to 4 hours.
