Who said you need a lot of greens to make a great salad? The wholesome, organic grains and refreshing herbs in this recipe will have you coming back for more. And to make it totally irresistible, add the perfect amount of Italian vinaigrette dressing.
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup chopped carrots
- 1/2 cup chopped cucumber
- 1/2 cup cut-up roasted red bell pepper
- 1/4 cup chopped fresh parsley
- 2 tablespoons chopped fresh basil
- 1/4 cup sliced green onion
- 1/4 cup crumbled Feta cheese
Whisk together vinegar, oil, mustard, garlic, salt and pepper.
In large bowl, toss remaining ingredients with vinaigrette.
Serve immediately or cover and refrigerate up to 4 hours.
