Sweet and Sour Chicken Tenders

Let your taste buds take a journey to the Far East tonight! This Asian-inspired recipe is enhanced by the succulent flavors of our own sweet and sour sauce, served over whole grains, fresh vegetables, and juicy chicken tenders.

INGREDIENTS
  • 1 pound chicken tenders, cut into thin strips
  • 1 (8-ounce) package SEEDS OF CHANGE® Sweet & Sour Simmer Sauce, divided in ½
  • 1 ½ cups sliced colored bell peppers, cut into 2-inch pieces
  • 1 cup trimmed, cut into 2-inch pieces, asparagus
  • 1 cup trimmed, cut into 2-inch pieces, green beans
  • ½ cup chopped onion
  • 1 (8.5-ounce) package SEEDS OF CHANGE®
DIRECTIONS

Place chicken tenders and ½ package of SEEDS OF CHANGE® Sweet & Sour Simmer Sauce in large bowl and mix well.

In 10-inch skillet cook chicken over medium high heat, stirring occasionally, until chicken is cooked and no longer pink (4 to 6 minutes).

Remove from skillet, set aside and keep warm.

Meanwhile, in same skillet, place peppers, asparagus, green beans, and onions; continue cooking over medium heat until asparagus and green beans are slightly tender and bright green.

Add remaining half of SEEDS OF CHANGE® Simmer Sauce packet and reserved chicken tenders; continue cooking, stirring occasionally, until sauce is heated through (3 to 4 minutes).

Serve chicken and vegetable sauce over warmed SEEDS OF CHANGE® Seven Whole Grains Rice.
