Our version of a Tex-Mex favorite features rotisserie chicken simmered to succulent perfection in SEEDS OF CHANGE® Taco Roasted Chipotle Sauce. Serve it with fresh vegetables, Mexican-style cheese, and our organic mix of rice, chia and kale for a meal that's muy deliciosa!
- 1 cup shredded lettuce
- 1 cup chopped tomatoes
- 1 cup diced avocado
- 1 cup shredded Mexican -style cheese
- Salsa (red or green)
- Sour cream
In 10-inch skillet place SEEDS OF CHANGE® Taco Roasted Chipotle Simmer Sauce and shredded chicken.
Heat over medium heat, stirring occasionally, until heated through (4 to 5 minutes).
Heat SEEDS OF CHANGE® Brown & Red Rice with Chia & Kale according to package directions.
To serve: On 1 tostada shell place about ½ cup chicken mixture, top with about ¼ cup warm SEEDS OF CHANGE® Brown & Red Rice with Chia & Kale, and ¼ cup each lettuce, tomatoes, avocado, and cheese.
Garnish with salsa and sour cream.
Repeat with remaining ingredients.
