Why settle for a dish that has only scallops or shrimp when you can enjoy them both in this wonderful recipe? To tempt you even more, this flavorful seafood feast includes our Asian-inspired ginger teriyaki sauce, and fresh vegetables - all served on a combination SEEDS OF CHANGE® brown and red rice.
- 2 tablespoons sesame oil or extra virgin olive oil
- 1 cup trimmed, cut into 2-inch pieces, asparagus
- 1 cup trimmed sliced pea pods
- 1/3 cup canned chopped water chestnuts, coarsely chopped
- 1/3 pound bay scallops
- 1/3 pound (21 to 25) peeled and deveined shrimp
- Chopped green onions
- Toasted sesame seeds
Heat oil in 10-inch skillet, over medium heat.
Add asparagus, peapods, and water chestnuts.
Cook, stirring occasionally, until vegetables are crisp tender (3 to 4 minutes).
Add scallops and shrimp; continue cooking, stirring occasionally, until shrimp just turns pink.
Add SEEDS OF CHANGE® Sesame Ginger Teriyaki Simmer Sauce packet and continue cooking until heated through (2 to 3 minutes).
Heat SEEDS OF CHANGE® Brown & Red Rice with Chai & Kale according to package directions.
Serve sauce mixture over warm SEEDS OF CHANGE® Brown & Red Rice with Chai & Kale and garnish with chopped green onions and sesame SEEDS OF CHANGE®.
