Tofu Tikka Masala

Here's a vegetarian twist on a classic and beloved Indian favorite. The delectable flavors in this dish come from our organic Tikka Masala simmer sauce combined with sweet potatoes, quinoa, brown rice, and fresh garnishes. It only takes a few minutes to make, but you'll want to savor the flavors.

INGREDIENTS
  • 2 tablespoons extra virgin olive oil or ghee
  • 1 cup peeled, sliced 1/8-inch sweet potato
  • ¾ cup sliced 1/8-inch onion
  • ½ package (7-ounces) drained extra firm tofu, cubed ½-inch (1 ½ cups)
  • 1 (8-ounce) package SEEDS OF CHANGE® Tikka Masala Simmer Sauce
  • 1 (8.5-ounce) package SEEDS OF CHANGE®
DIRECTIONS

Heat olive oil in 10-inch skillet over medium heat.

Add sweet potatoes, onion, and cubed tofu.

Cover and cook, stirring occasionally, until sweet potatoes are slightly tender (6 to 8 minutes).

Add SEEDS OF CHANGE® Tikka Masala Simmer Sauce packet; continue cooking, stirring occasionally, until heated through (4 to 5 minutes).

Heat SEEDS OF CHANGE® Quinoa & Brown Rice with Garlic according to package directions.

Serve warm SEEDS OF CHANGE® Quinoa & Brown Rice with Garlic on plate and top with sauce mixture.

Garnish with green onions and parsley.
