If you thought Alfredo sauce was just for fettuccine, you’re about to make a delicious discovery. Imagine that thick, creamy sauce covering a mouthwatering medley of tuna, mushrooms, snow peas, and organic whole grains. The next time you’re in the mood for tuna (or fettuccine), try this recipe!
- 1 cup sliced mushrooms
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped red pepper
- 2 cloves garlic, finely chopped
- 1 tablespoon olive oil
- 1/2 cup vegetable broth
- 1 medium summer squash, halved lengthwise and cut into 1/2-inch pieces
- *For more tuna flavor, use a large can (12 ounces) of solid white tuna.
In 12-inch nonstick skillet over medium heat, cook and stir mushrooms, onion, celery, red pepper and garlic in oil 5 to 7 minutes or until onion is tender.
Stir in vegetable broth, squash, pea pods and dill. Heat to boiling. Reduce heat; simmer 5 to 7 minutes or until vegetables are tender.
