Turkey Meatloaf with Whole Grains & Mushrooms

INGREDIENTS
  • 1 pound ground turkey
  • 1 (8.5-ounce) package SEEDS OF CHANGE®
  • 1 (8-ounce) package SEEDS OF CHANGE® Mushroom Simmer Sauce, ¼ cup reserved and set aside
  • ½ cup chopped onions
  • ½ cup chopped fresh parsley
  • ½ cup chopped bell peppers, any mixture of red, yellow, orange, green
  • 1 egg
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly cracked pepper
DIRECTIONS

Heat oven to 350°F.

Reserve ¼ cup reserved SEEDS OF CHANGE® Mushroom Simmer Sauce for later

In large bowl stir together all ingredients, including the uncooked rice; mix well.

Pat turkey mixture into greased 9 x 5-inch baking pan.

Pour reserved SEEDS OF CHANGE® Mushroom Simmer Sauce over top of meat mixture.

Bake for 60 to 65 minutes or until thermometer reaches 165°F in center of loaf.

Let cool in pan 10 minutes.

Cut into pieces and serve with salad.
