Vegetarian Rice with Mushroom Sauce

INGREDIENTS
  • 2 tablespoons extra virgin olive oil
  • 1 cup trimmed, cut into 2-inch pieces, asparagus
  • 1 cup sliced, cut into 2-inch pieces, red pepper
  • 1 cup sliced fresh mushrooms
  • ½ cup chopped onion
  • 1 (8-ounce) package SEEDS OF CHANGE® Mushroom Simmer Sauce
  • 1 cup canned black beans, rinsed and drained
  • 1 (8.5-ounce) package SEEDS OF CHANGE®
Garnishes:
  • Chopped parsley
  • Sliced cooked fresh mushrooms, if desired
DIRECTIONS

Heat olive oil in 10-inch skillet, over medium heat.

Add asparagus, red pepper, mushrooms, and onion.

Cook, stirring occasionally, until asparagus is crisp tender (5 to 6 minutes).

Add SEEDS OF CHANGE® Mushroom Simmer Sauce packet and black beans; continue cooking, stirring occasionally, until heated through (5 to 6 minutes).

Serve warmed SEEDS OF CHANGE® Brown & Red Rice with Chia & Kale on plate and top with sauce and vegetables; garnish with parsley and mushrooms.
